Yeah, I went there.
Kelp based wraps are kind of an emerging thing, so I had to settle for spinach (which worked out ok)…
- A spinach wrap quesadilla
- black forest ham
- eggs over easy
- avocado salsa from Costco.
Gonna try doing Ace’s johnny cake Eggs Benedict variation someday…

Spinach and avocados are two of my least favorite “foods.” I grew up on boiled spinach….

I was alays fond of spinach as log as there was tarragon vinegar to douse it with.
I’ve no use for spinach, unless it’s crisp, rinsed-&-raw, in my salad.
“Creamed Spinach” always felt to me like an ill-conceived waste of both cream & spinach.

As somebody living at the edge of the Black Forest I have to ask:
Where on the picture is there any Black Forest ham (Schwarzwälder Schinken)?
Admittedly, its grocery store sandwich sliced (thin) ham, but it’s a decent variety. If it’s not “real” black forest ham, it’s close.

That sure looks good. The best I can afford is from Costco.
two other ways to make green eggs:
1. mini potatos – cook the raw egg and raw potatos together, where they touch; GREEN! The ‘good’ way, I never noticed a difference in taste, but the potatos were raw when I cooked them, and the overall meal needs work to make it past a test kitchen… though for a science experiment it’s rather fun.
2. Time – cook eggs like normal, then wait several hours. Voila! GREEN eggs, and they are terrible… or so I’ve heard, I’m not wasteful enough to do this myself… though I heard that this happened in the enlisted mess on a navel vessel. To the determent of morale.
You could maybe also try some green food coloring. Not saying it will work, but it is an alternate idea.
That’s how my mom made me “green eggs and ham”, back in the early 80s when it was my favourite book. 😛
